There is a whole world of spirits to play with in making drinks. Baijiu offers a whole new realm of flavors for your cocktails. Several styles of baijiu exist. This winning cocktail earned me a trip to China and uses a light aroma baijiu. The other ingredients are brandy, China China, sherry, allspice dram, orange bitters, and habañero shrub. While not often used in cocktails, bai and large, this spirit leaves a lot of room for creativity.
