Mount Gay Smash

Not a smash in the classic sense, but it recalls the Bajan cocktail standard the Goombay Smash. It has rum, orange curaçao (which can be made from leftover orange husks), acid-adjusted pineapple juice, dried apricot syrup, and carbonated coconut water. The garnishes are homemade pineapple leather and shredded coconut. Sip it on your next Bajan occasion or any other one. Having fun though is of para-mount importance.
